RECIPE: Mini Ginger Chewy Cookies

These are fun little chews that you can store and snack on. They are thin, but still chewy. Healthy and a great digestive aid as they contain ginger, cinnamon and dates! Good luck eating just one!

Easy 8 ingredient, gluten free, dairy free, sugar free, egg free mini ginger chewy cookies

INGREDIENTS:
1 cup organic medjool dates

1 tsp ground organic ginger

1/2 tsp ground organic cinnamon

1 tbsp organic sesame seeds

2 tbsp organic shredded coconut

3 tbsp organic coconut flour

1 tsp maple syrup *optional

1/8 tsp salt

Place all ingredients except for sesame seeds into a food processor and pulse until a ball starts to form. Place into a stainless steel bowl with the sesame seeds and use your hands to work the mixture into a ball. Wrap in parchment paper and chill in the fridge for an hour.

Remove and roll between two pieces of parchment paper to about 1/4 inch – slightly thinner is fine too.

Cut into small 1.5″ rounds and bake on a parchment lined baking sheet at 250F for about 10-12 minutes. They’ll be super chewy when they come out but will harden slightly upon cooling. Let cool and store in a jar or enjoy warm and soft!
